Hi everyone!! I'm doing a cake for a babyshower and just talked to the father-to-be and he said that the mother-to-be likes lemon! so I need a good recipe for lemon cake and filling. I don't want it to be too strong either.

I'd make a white cake with lemon curd. You can't get better than that if you like lemon.

I like making a white cake and then brushing a lemon flavored simple syrup on the leveled layers. I also use just a thin coating of lemon curd on the layer that will be filled. You can use a lightly flavored lemon Bavarian cream or buttercream for filling. The simple syrup is
1 cup granulated sugar
1 cup water
a few drops of lemon extract
Boil till sugar is dissolved, remove from heat and cool to room temperature. Brush on the cake layers with a wide pastry brush. Just enough to moisten, not soaking.

Thank you everyone for your suggestions!! I think I may make a lemon cake with pudding in it with a raspberry filling! I need something quick and easy since my time is limited!!!
