Hi. I am currently taking the Wilton Fondant and Gum Paste class and was looking for some ideas for my final cake. I have been making plain old yellow cakes so far, but am bored with that and I would like to make something else for my final cake. I really don't like the taste of Wilton's fondant, so I was also thinking of making my own [ I guess this will depend on how adventurous I feel icon_smile.gif ]. Anyway, could some of you PLEASE give me some ideas of your favorite combinations!?!

I made a great combo for my future DIL's cake..
Chocolate cake with chambord liqueur and raspberry SMBC filling...so pretty ...chocolate cake with pink filling and the outside was pink too..

The flavour was super!! I tend to over flavour the innards a bit because if it is too delicate, it gets lost in the flavour of the cake..

Another fav is white/yellow cake with lemon filling..either lemon curd or lemon SMBC

definitely make your own fondant! The wilton tastes terrible and I think is much harder to work with. the MMF recipe of 20 large marshmallows and 1 tablespoon plus a dash of water, microwaved 1 minute and stirred til liquified. Then start adding bagged confectioners sugar until it starts to get like a dough. Crisco your hands and dive in with both hands to knead it and continue adding sugar until it is not sticky to the touch but a nice dough consistency. Let set and cool wrapped in saran wrap. Tates awesome!! Can eat it by the handful. Cheap. Much more pliable and workable than the bought stuff too!! It takes a little practice but don't give up. It is SOSOSO worth it and like riding a bike, once you get it right once you will continue to get it right. Great Value marshmallows from wal-mart work better than any other kind I have tried.

I was just trying to look around for posts of great cake/frosting/filling combinations!!! Sadly, I can't find anything......a link anyone.......

I've gotta have more than just plain ol' box cake flavors with plain ol' buttercream. I don't have any ideas for flavor combinations......

sirmaxwell .. hi how are you.. I see that you said to use 20 lg marshmallows for homemade fondant.. how much do you use in the little bags.. i have 2 bgs of mini marshmallows. would you know how much I would need .. Thank you for your time.. oh do you use any flavoring when making the fondant or is it sweet enough .. Happy Baking.. [email protected] ... icon_smile.gif

Theresa50 I don't know how many small ones it would be. I do, when making a larger batch, use a 1 pound bag of either large or mini marshmallows with 3 tablespoons of water and microwave exactly 2.5 minutes and either the large or small works beautifully. Don't overmicrowave or it gets all weird and stretch and impossible to use. They won't be completely melted but you stir with a wooden spoon until they liquify and it works great.
