Timing For Baking Cookies

I'm baking sugar cookies for a wedding on Saturday in the shape of wedding cakes. I always prefer my cookies 1-2 days after I frost them because I think the frosting is more dry then. But I still want the cookies to be fresh. What timing should I use for baking and frosting the cookies this week? Thanks!

I wouldn't hesitate to start baking either tonight or tomorrow, especially if you have a whole bunch to make. You don't want to be stressed out at the end, and they'll be fine. Get them wrapped as soon as you feel comfortable, and they'll stay fresh in their wrappers till Saturday.
