boy, do i ever have a cake disaster story!
i had to make 2 retirement cakes that would feed over 100 people.
so, i made 4 large sheet cakes and put 2 together each to make 2 large cakes. well, it was well into the night and i was getting tired. it took 3 boxes of cake mix for each pan. anyway, i asked my 13 year old daughter to help, "big mistake", but i still love her! as she was putting the pan in the oven, i was frosting the other cake. all i had left to do was wait on this last cake. well, after the cake was about to be done, i asked her if she made sure she put in all the eggs. she said, "what eggs?"
...and i had no eggs left!!! luckily my neighbor let me borrow some.
it was now midnight and the cakes were due the next day!
let's just say, this is what i looked like the next morning when they came to pick up the cakes.
the moral of the story...if you want something done right, do it yourself.
I had a similar near mishap. I had a customer call me the night I began making the cake to double the servings and I only had enough eggs for what she initially ordered! I also had a cake board and box for the initial order. I used the "no colesterol" recipe and used merange powder to make "egg whites" to use in the second cake and instead of a larger single layer cake she got a two layer smaller cake! both cakes turned out great!
It's amazing what you can do when you have to!
