I own my own small shop in my fairly small town. I do cakes and other baked items Brownies, jumbo muffins, cookies(not all scratch). I have been given the opportunity to meet with the food and beverage director for my local casino. They want to meet with me about providing desserts for their buffet. It is cheaper to contract out than to pay a chef (salary, insurance etc.) It could be nothing or could be really big. I keep saying OH My God! what am I going to do! Any advice or words of encouragement would be grateful My head is swimming!!!! Thanks!
