Hola a todas, como siempre recurro a sus amplios conocimientos de reposteria, y quiero preguntarles lo siguiente.. me gustaria hacer unas galletas que he visto decoradas con fondant, pero una vez probe unas que habian perdido lo crujiente de las galletas, es decir, estaban blandas... como puedo hacerlas y que se mantengan crujientes?

No las he hecho antes pero quizas sea lo que les pusiste debajo. Que usaste?
Yo me acuerdo haber visto uno en television donde las decoraron con fondant, pero no me acuerdo que le pusieron debajo.

Yo tengo una revista que dice que para que las galletas se mantengan crujientes, se pincelen con mantequilla derretida para impermeabilizarlas,pero esto es en el caso de decorarlas con "royal icing" donde la galleta ya esta fria
Pero para decorar con fondant me imagino que no es posible porque la galleta tiene que estar caliente a la hora de decorarla...
Tambien he leido que si decoras las galletas cuando estan frias, puedes usar un "glase" hecho con azucar pulverizada o de confeccionar, agua, sabor y corn sirop.
Si necesitas traduccion, me avisas.
Glaze Icing
Makes 2 cups
1 pound confectioners' sugar, sifted
6 tablespoons milk or water
6 tablespoons light corn syrup
Flavoring (1 teaspoon concentrated extract or 2-3 drops concentrated candy oil)
Food coloring
Mix the sugar and milk or water thoroughly in a mixing bowl. Mix until icing is soft and cream like in texture. Then, add the corn syrup. Mix just until combined. Divide icing into several bowls and flavor and color to choice. Cover each bowl with plastic wrap to keep it from drying out.
Store for up to 2 weeks in the refrigerator, tightly covered (place a layer of plastic wrap directly atop the icing before capping with the lid.) The icing will store up to 3 weeks if water is used instead of milk. When ready to reuse, stir the icing until it flows.

Gracias por esta receta, si me imagine que con eso se decoran, (el glase), aunque no se que es light corn syrup, estoy en Venezuela y no se que nombre tendra eso aca. El efecto que me gustaria que tuvieran las galletas es como el de unas que estan en el album de galletas, que son fantasmitas, y que quedan un poco brillantes...
El light corn syrup es un sirop dulce, como glucosa. Es espeso.
Para que te quede el frosting brilloso es mejor usar el Royal Icing. Yo uso la receta de antonia74 que es fabulosa y facil de usar y hacer.
