Because I'm not a storefront so have absolutely nothing I can do with a cake once it's made so I require payment up front with a deposit then 28 days before if they want to use a check the final payment needs to be here otherwise cash is 14 days prior to the event. All too often I've heard of others getting burned (and have myself) when doing cakes for payment on delivery people suddenly don't have enough cash on them, they forgot the check at home, you don't know if the check is any good... yada yada... Just not worth it to a small business...
Absolutely! Also have them sign a contract with everything in writing to cover your a$$.
Depends on what kind of cake you are talking about. On wedding cakes, I require a $50 non refundable retainer with the balance due 2 weeks before the event. On birthday and occasion cakes I prefer payment when ordering, but some of my regulars I let pay on pick up, unless it's over $50 worth, then I require payment when ordering.

Weddings are due 4 weeks in advance with a deposit a minimum of 3 months in advance.
Any thing else, 50% due when order placed and remaining 50% due at delivery. If they don't have the cash at delivery then the cake goes back with me. I have not had anyone that has only done 50% though, everyone has paid 100% when the order is placed with no questions asked.
For orders under $100, payment is due at pick up/delivery.
Orders over $100 require a $50 deposit, with the balance being paid in full 2 weeks prior to the pick up/delivery date.
Wedding orders require a $50 non-refundable booking deposit. Balances are due in full one month prior to the pick up/delivery date.
