Anyone have a good tasting pumpkin flavor roll-out cookie recipe? This will be going to a group where there is a potential for holiday orders, so I want a knock-their-socks-off tasting cookie! LOL!

How about adding some cinnamon, nutmeg, and pumpkin pie spice to the NF recipe?

i would love to have that recipe too...i tried one that i found on the internet but it was jus way to wet...i got fustrated and tossed it all...

Just a bump for any more suggestions. I saw one on the internet that actually had canned pumpkin in it, BUT I think it might have the same results as you had, TiffTurtle. SO...I'm turning to my CC friends to see if y'all (yep...I'm from the South!) have anything that is tried and true.

I think I might try a small batch of NFSC with the suggestions you gave, SweetThistleCakes. I am curious if this would give it more of a spice cookie taste than pumpkin, though? That's what so nice about experimenting, right? LOL!

Try the Libby's (pumpkin) website as they have one, but I have not tried it. Have myself experimented and tried one recipe for pumpkin roll-outs, and neither was what I wanted - like you said, too wet and sticky, and the flavor was not what I was looking for.

Okay I checked my book The Perfect Pumpkin and the author does not have a roll out cookie recipe. She does have one for a cake like cookie that she recommends making cookie sandwiches with, if you would like the recipe send me a pm. I even checked my Amish cookbook but no pumpkin recipe.

I think I remember seeing some pumpkin flavored coffee creamer at the store though, perhaps that might work in the rolled cookie recipe.

Hey, that's a great idea! I loved using the Carmel Vanilla creamer recently...will have to see if my store carries the pumpkin flavor! Have sent a PM for the recipe you mentioned...just in case! LOL!

That's the exact same one I had ran across! LOL...how funny. I guess I'm going to have to try both ways...this recipe as well as the spices previously recommended above. Can you tell I'm a little undecided? LOL!!!

Here is a recipe from another CC member (ge97icon_cool.gif. They posted it in a forum and I just happened to save it in case I ever decided to try it:

- I package sugar cookie mix - the kind you add butter and an egg to. I get mine at Walmart. Mix according to directions for the cutouts.
- Add a few tsps of pumpkin pie spice - if you don't have this, I'm sure adding a little cinnamon & nutmeg would work
- Add pumpkin pie mix(not pure pumpkin!) - Now this is the tricky part - I don't know how much I added - If I had to take a guess it would be about 3/4 cup, but you should add according to your tastes

- Use your cookie cutter and bake - I have a convection oven so my temps are going to be different than a regular oven - I would say to bake at 325 for no more than 7-8 minutes

tayesmama: i totally forgot about that recipe..thank you for posting it. It works with the no fail cookies also...i also add some pumpkin pie spice to the buttercream & it tastes really good! Or there is a syrup that is pumpkin that you could add also.

I have made the recipe quoted by tayesmama a couple of times and they have gotten rave reviews from the people I have given them to. I used pure pumpkin in mine though and then three tsp of pumpkin pie spice. To my buttercream I add some pumpkin and pumpkin pie spice. Since the bc isn't white if you add pumpkin to it, I also made some cream cheese frosting and frosted my ghosts in that so they would be white. The pumpkin bc everyone loved, but I personally thought the cream cheese frosting on the cookies was good too! It makes a delicious cookie, ones that I can't resist!

Not really, it is fresh pumpkin that has been cooked soft the pureed in a blender or food processor. (Sorry this sounded a little harsh)This was the description given to me by my grandmother. The Libby is just more processed, smoother, but the same.

Libby's makes 2 different things. Pumpkin pie mix- where all the spices are already in it and pumpkin puree-where it's just mushed up pumpkin, and you spice it the way you want.

good...I am glad you can buy it! .....I really didn't want to buy a pumpkin, cook it and then run it thru the blender.

I think a cream cheese flavored icing would taste good with these
