do you recommend torting character cakes?

if, so what is the best way to do

I assume you mean the character pans. I can't see why not, its just a shaped sheet cake. I would do it the same as a sheet cake. Cut your layer through the cake (knife, dental floss, leveler), lift off top by putting a thin cookie sheet through the cut, and lift it off. Fill - be sure to pipe a dam to hold filling in. Then carefully slide the top back onto the cake lining it up in the same place.
