I met with a b/g in the spring......they ordered a wedding cake for Oct.....at the meeting I gave them several small cakes with fillings for tasting.

They called the other day and asked if they could taste choco and white cake with 2 different flavors.....I of course said yes. They want choco mousse and white choco with strawberries.........

I later thought about it......they are getting a lot of FREE cake from me.....I could kick myself...........

Sorry to hear that. Have ever thought about buying one of those jumbo cupcake pans. You can line with the cupcake paper. Pre-bake or use left over cake batter to make them. Then you can frezze then. When someone wants to taste a sample you can pull one out, cut in half put the filling and just put frosting on the top. this gives them an idea of what the cake looks, see the filling and frosting. Then you will not have to give a cake, a jumbo cupcake is more then enough to taste and get the idea of the flavor.

The jumbo cupcake are large and enough for about two people and if you sampling you do not neet a 6in cake to taste. I know someone who does the cupcakes and if they want a 6in she charges a small fee for a one layer cake with filling and the frosting of their choice. Nothing fancy she tells them, it will plain and simple if you try too much then you are gonig to get confused on what you want.

I like the giant cupcake idea...I also usually make a whole cake for sampling and then give it to them to take home. I will definitely keep this in mind for my next wedding cake sample! Thanks! icon_wink.gif
