Chocolate Extender Troubles

Ok, I made my first devils food cake using the extender. I used poured ganache, so it tasted ok, but I thought that the chocolate flavor was extremely weak. So did I miss the boat? Are you supposed to add more cocoa or something when doing a chocolate extender and if so, does it replace some of the flour? Any help would be appreciated.

I always add a bit of chocolate flavoring when I use an extender with the chocolate cake mix as the extender does weaken the chocolate flavor.If you add cocoa it might distort the mix but I;m not sure.Maybe someone will come along and have abetter answer for yah!!

Bumping this one...I have to make the same cake this weekend and was curious how it would work with the extender recipe!!

i use:

chocolate pudding...to bump the taste up

AND

I add about two heaping TSP of hersey's special dark cocoa powder for an even richer chocolate taste.

it also helps to add just a dash of vanilla to enhance the chocolate flavor if you add the extra cocoa powder.

some (tho' I haven't yet) also add a tsp or so of instant coffee for a flavor boost.

I always add 1 oz. of unstweetened premelted baking chocolate. Tastes nice and chocolatey!
