i am trying to start a small cake biz in my spare time (ha what is spare time). basically i am a mother of two and work two jobs so i need to know the best way to store a cake for a couple of days before the event, tupperware or wrapping it in saran wrap. should i apply crumb layer then refridgerate or refridgerate it without it. should i apply crumb layer the day i'am going to do the final icing/decorating? help please if i can get this off the ground i won't have to work these two jobs.

Are you talking about an already decorated cake or just the baked layers?
You can do a search on freezing cakes. That is what I do with all my baked layers. Works great!

If you are talking about baked but undecorated layers, freezing is the way to go. I bake, let cool (mostly - at least not steaming hot), wrap in plastic wrap and pop in the freezer. Works great. In fact, I have 10 layers in the freezer to be decorated tonight for a wedding tomorrow. There is NO way I could have done that all today so freezing is a great way to stockpile for future cakes.
