I have a grooms cake for this Sat. It will be choc cake with Choc buttercream with Mosaic pattern on the sides done with milk choc (I will spread it out very thin, let it harden and break into pieces and place on the sides of tiers. My question is how do I adhere the choc pieces to the buttercream? I was thinking about thinning some corn syrup with water and lightly brushing choc pieces before placing on the cake? Think that will work? I am open for any and all suggestions. And one more thing: I am planning on finishing this cake Fri and the wedding is at 5 Sat afternoon. But I have to move my daughter in her dorm room (about 1 hour away) Sat morning. So I want to have this thing ready (I have to do the 4-tier wedding cake too) to take to the church Sat morn. My question is do you think the choc pieces will stay in place once I put them there. I don't want to come back for the wedding in the afternoon and have all the choc sliding off. Yikes!

TIA

Diane

Royal icing or your corn syrup will be fine...even a little squirt of the chocolate BC I'm sure would adhere them. Just don't let the cake get warm and nothing will slide. Good luck on moving your daughter out...that would bother me more than the cake. icon_cry.gifthumbs_up.gif I can't wait to see the cake. I think that mosaic look is one of the most incredible designs!

I use piping gel to adhere things to my cakes and did not have a problem with anything sliding off. The corn syrup would probably work just as well though. Sounds like your Saturday is very busy!!! Post the cakes, can't wait to see them icon_smile.gif

Couldn't you put the pieces on before your icing crusts and they'll just stick to the icing?

Thank ya'll so much for the help. I didn't think about royal icing or piping gel. At least now I have a back up plan.
Jen1977 I did think about doing it before the icing crusts but I think it may take me awhile to place the pieces on the sides (kinda like a puzzle it will be odd size pieces and shapes) and I'm afraid the sides won't be tacky enough to hold.
Thank ya'll so much.

mgdqueen: Yeah it is gonna be a tough day. This is my baby going away to college. But she will only be about 45min to and hour away. We just didn't want her to have to drive back and forth everyday. And it is a small campus, Christian college in Mobile so she won't be very far. At least that is what I keep telling myself.
