Years and years ago, I worked for an Italian bakery for a week. (UGH!)
Anyway, they torted all their cakes and spread simple syrup on all their layers. This made them soft. I never understood this but maybe I learned this so I could tell you !!!
Take equal amounts of water and sugar, bring to boil, boil for 1 full minute then cool. when room temp, take a wide brush and brush it on your layers.
Don't have any idea why your cakes are hard, it could be several things but if you are happy with the taste and texture, try the simple syrup.

PRcakes,

Hi PR CAKES,

I used to have the probem, but what y ou could do is used karo syrup and spread with a brush all around the cake then take a plastic bad and cover the cake. This helps keep the moist.

2. or you can take sugar brandy/1/2 sugar 1/2 brandy boil it and but karo surup boil then wait until it cools down and spread it all over cake.

3. for the near future after your cakes come out of the oven put a plastic bad over the cakes and don't let the hot steam come out of them this will keep your cakes moist very moist.

ps, where are you from?? with a name of pr cakes are you from puerto rico??

good luck michelle happy fixing thumbs_up.gif
