Does anyone know of a good lime filling recipe? It will be a filling inside of a wedding cake...the theme of the wedding is Lemons and Limes and I will be using fresh lemons and limes on the cake instead of flowers. I found the lemon-lime recipe in the recipe forums, but that is all I could find.

I recently made key lime cake with key lime filling (well, I used regular limes, as you can't find key limes where I live) and used this recipe for the filling. It was a huge hit and I have made it two other times since. My husband has been a chocolate cake lover for as long as I can remember, and now this is his favorite. Enjoy if you give it a try!
KEY LIME FILLING
Filling
6 tablespoons Key lime juice or fresh lime juice
1 envelope unflavored gelatin
2 1/2 cups chilled whipping cream
9 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
3 8-ounce packages cream cheese, room temperature
1 cup sugar
1 1/2 tablespoons grated lime peel
Place lime juice in bowl. Sprinkle gelatin over to soften. Bring 1/2 cup cream to simmer in heavy medium saucepan. Remove from heat. Add white chocolate and stir until melted and smooth. Stir in gelatin mixture. Cool slightly. Using electric mixer, beat cream cheese, sugar and lime peel in large bowl to blend. Slowly beat white chocolate mixture into cream cheese mixture. Using clean dry beaters, beat remaining 2 cups whipping cream in another large bowl to peaks. Fold into white chocolate mixture.
This sounds delicious! Now I have an excuse to open a bottle of the key lime juice I bought while in Florida!
I have made Lime Curd and used as a filling. Used lemon curd recipe instead of lemons used lime. Brushed a little curd on cake layer then mixed curd with buttercream icing a spread over layer of curd. Made a great filling.
Beemarie what keylime cake recipe did you use? By the way that filling sounds very yummy!!
Aside from making the lime curd and mixing it with BC, I would mix it with a whipped icing and make a lime mousse. It would be light and fluffy and oh so refreshing. Mmmmmmmmmmmmm, it is making my mouth water!

Asul, I use the WBH White Butter Cake, and in addition to the key lime filliing, I make a lime curd (like the previous poster said, make a lemon curd but replace the lemons with lime) and before I put the filling on the cake, I put a thin layer of lime curd. This intensifies the lime taste. Also, you can make a simple syryp with lime juice and brush it on your cake to make it even more lime tasting. This is one of the best cakes, so delicious, a huge hit
