Help Needed Urgently!!

i've made my sugar cookie dough and its chilling in the fridge. how do i roll it? i want it to be a thick cookie so how do i acheive that? i don't have a mat for rolling so what shal i do?
i heard its better to use a light metal pan rather than a dark thin pan but i only have a dark one, so can i cover it with foil and bake the cookies?
lots of quetions that need answering!!!!!hope someone can help! icon_redface.gif

You can do a couple of things. you can use a dish cloth that is lightly floured to roll it on, or you can lay saran down on your table and flour that, or my favorite is to use the wilton silicone treated parchment paper to roll my cookie dough out on. I take two 1/4 inch dowels and lay them beneath my rolling pin. That way all of my dough is uniform in size. and it give a nice thick cookie that isn't too thick. It would be fine to use your dark cookie sheets, I do. You can also line your cookie sheets with the afore mentioned parchment paper and you will have no issue with cookies sticking. In fact I just slide the paper with the cookies on it onto my cooling racks then let them cool that way. Also another little trick is to take a clean rolling pin and roll it over the freshly baked cookies lightly before removing them from the pan in order to give them a super flat surface. hope that helped answer your questions. Oh and walmart has the best price for the parchment paper. yOu will find it in the cake decorating isle.
