I have interest in a 3 tier cake to feed 75. The party is Saturday. We are going camping late afternoon Friday thru the weekend. Do you think I could make this cake and deliver it Friday, and have it be ok?

Lots of wedding cakes are made that far in advance, I don't think it would be a problem. I wouldn't use any fillings which need refrigeration or any meringue buttercream.

My mother inlaw did my SIL's wedding cake. She baked Thursday and decorated and delivered on Friday. No problem with the cake at all

Thanks! I've never baked more than 2 days in advance unless I was using fondant. So I wasn't sure. I don't think it will be served until Saturday night, so I didn't want to accept the job if it was going to be substandard. I've got to bake Wednesday,and ice/decorate Friday am, deliver Friday pm. Party Saturday.

I suppose the cake will be 'ok' baked 3days ahead of time, but unless it is frozen or at least refrigerated all that time, it won't be as fresh as it could be.

Personally, overnight is as long as I hold a cake to be certain it is fresh for a customer. For myself- as long as it is chocolate-who cares.
