You can freeze a cake for up to 3 months when wrapped in heavy duty foil.... thaw cake completely before decorating. (never freeze or refrigerate a cake in the pan!) you can decorate and store a buttercream covered cake for 3 days and a fondant covered cake for 5. these are the times i have learned from my Wilton instructor and the times i give my Wilton method students. hope this helps!

I think it is going to depend on your filling and type of buttercream recipe you use. I know that I use a buttercream that does not need to be refigerated...once covered with fondant I can leave it at room temp. for days...it will still depend on what your ingredients are in your cake and filling though....(I am sure someone else will respond with more helpful hints though...)Do you have a yearbook??? I think you may be able to find more info there...or even the wilton site.
