This recipe is listed under diabetic cakes. Am I correct in assuming that someone with diabetes can eat this cake? I don't know anything about diabetes but have a request to do a diabetic cake. Any and all suggestions are much appreciated!

I am not sure, but my guess would be no because cake mix contains sugar.

What I would think you could do is just take any recipe and replace the sugar with Splenda???

My suggestion would be to offer her an individual, mini cake that she can eat, and then serve a real cake so other people can enjoy it. Many folks do not tolerate artificial sweetners, so I'd be very afraid to serve it to a lot of people. Plus her own cake would be a very sweet touch!

I am making 2 sheet cakes and just a small diabetic cake, I agree, I dont think I would like a cake with artificial sweetners as I don't like anything "diet"!!

I would go with a regular cake, maybe light on the frosting. The cake is not so much the problem but the frosting is! Most diabetic's are used to removing most of the frosting anyway. I would'nt make them their own cake.

a sugar free icing i have used is

1 tub of defrosted sugar free whipped topping (cool whip lite i think is the one)
1 box sugar free pudding any flavor
make pudding according to package and then mix with whipped topping this must be kept in the fridge and you cant really decorate with it.

As far as diabetic cakes, I made one yesterday from the Splenda website...it was really good (oddly heavy)...but really good

lol when we made on last year it ended up tasting like corn bread. to this day we dont kow why

This one was chocolate...so I didn't really get the cornbread vibe...What an interesting surprise that must've been!
