My husband told my mother in law I would make her wedding cake for her. She is getting married in march. So I have a few questions and any answers are greatly appreciated. Is there a special way to make the top layer of cake so she can freeze it for a year? Where do I get all the supplies to make this cake? Also, if she wants to feed 200 people how many tiers should there be? how do I stack the tiers to make sure they will stay standing? Any other suggestions you might have are also greatly appreciated.

Hi Beth and welcome!! Everyone here is happy to answer your questions but it maybe helpful if you tell us how much experience you have with tiered/stacked cakes. That way we have an idea how much detailed info you need! First..you don't need to do anything different with the top layer in order to preserve it for their first anniversary. Just double wrap it really good with foil and if possible put in an extra large zip-lock bag, squeeze out as much air as possible, pop it in the freezer and it will be just fine! Second...do you have a Michaels Craft store in your area, if so, that's a good place to start. If not, check the yellow pages for Cake Decorating Supply Stores, if nothing there, go online and you will find everything you would possibly need. Wilton.com is a great resource for supplies and information! You have many, many options in cake sizes and stack/tiered methods for feeding 200 people! How' that for starters? Happy baking, Missey

thank you so much.....I have no experience with tiered cakes. I have made layered cakes before but that's about it. I really enjoy baking so my husband thought this would be a good thing for me as well.

I know this is an older post, but the Wilton wedding cakes book has everything you need to know. They even tell you how many people each size layer will serve, how much batter, how much icing, etc... It is an awesome resource.

The wilton serving charts are not always accurate though. Best thing to do is sit down with the bride and ask what size serving slice she would like to have. Then take the pans that you are going to use in your cake, trace them out on a pieces of paper. Then take a ruler and a pencil and mark out the size serving on the trace outs and count how many "slices" you have with each pan, add the totals up and voila you have the amount of servings that your design will make.

We are making 1 1/2 servings for each serving the Wilton book says a cake makes, that way, everyone can have a nice sized slice.
