Not sure if this is what you mean... but a filling is just a general term for anything you would tort and "fill" the cake with. Mousse is a filling. but a filling could also be buttercream, fruit flavors, pudding, cream cheese icing with oreos (sorry, just lOVE that one. LOL ), whatever your imagination comes up with!!

only thing i wanted to add..mousse is another filling and has gelatin in it as an setting agent and needs to be refrigrated
it's kind of like baking with your fridge
you have to put it in the fridge in order to set it

my favourite filling is no-egg, no-gelatin mousse (really chocolate cream) made with cooled melted chocolate with butter, and cold whipped cream. the chocolate "sets" the whipped cream and you get a moussey texture without having to muck about with gelatin, and it's safe for those allergic to eggs or lacto-ovo vegetarians who don't eat gelatin (you can also make it with non-dairy whipped topping and dark non-dairy chocolate for those allergic or intolerant to dairy, or for a kosher recipe)
i made that type of filling too
But you can only do that with chocolate
i make mousses like, caramel, coffee, cream cheese and these reguire gelatin....i don't have anything against gelatin anyway
for vegeratian customer i use a gelatin called agar agar
