I'm not an expert but I seem to remember reading that fondant can be kept in the fridge for weeks. Just make sure it is covered with clingwrap and put into an airtight ziplock bag - be sure to get as much air out as possible. If you need it by Oct 20th, I suppose you can make it soon.

You won't need to refrigerate it. It needs to be very well wrapped and in an airtight container. It will be fine on the counter for several weeks.

But if you want to refrigerate it, just be sure to give it time to come back to room temperature before you use it.

Thanks so much! I have a bunch of cookies and a cake due all in the next few weeks so I am trying to think of how to get things done. Making the fondant early would be a big help.
