OK, I'm making a red velvet birthday cake for a 9 year old boy. I cannot do the typical cream cheese icing/filling (which I believe is what he wanted) because the party is outside in Charleston, SC (in other words, hot and humid). Anyway, I am going to ice it in the high humidity buttercream from this site but I'm trying to think of something to fill it with that will make it a little more tasty, plus appeal to kids. Any ideas?
Here's a post I remember reading where someone used Oreo filling and people liked it (don't know if I'd like it but kids sure would!). Instead of making with whipped cream you would use buttercream & oreos.

I did think of the oreo filling since a red velvet is basically a chocolate cake but I wasn't sure if other people would think it was weird. May have to try it though. I've heard that oreo filling is really good!
I've had red velvet cake filled with raspberry jam which is yummy. I don't see why the Oreo filling wouldn't work since it appeals more to kids. You could also have a cake on the side for the adults in attendance with a filling that would appeal to them.
can you just get it really cold before you deliver it? and use the regular cream cheese icing as a filling? perhaps you can do more layers of cake and thinner layers of filling to acheive the same taste w/o sliding? And definitely use whatever you know will be a stable icing for the outside.
what about the crusting cream cheese icing on this site? It seems to hold up a lot better than your normal cream cheese icing.
MINI M&M'S CAN ALSO BE USED OR YOU COULD ALWAYS PUT SOME GUMMIESIN THERE BUT DONT MIX THEM INTO THE ICING LAY THEM ON TOP BEFORE YOU PUT THE SECOND LAYER ON OTHERWISE THE M& MS WILL BREAK ALL UP...
If you go with the Oreo filling I would use the WBH buttercream icing recipe. It is not as sweet so you do not have a sweet overload with the oreos added.
Magnolia Bakery's Creamy Vanilla Frosting is amazing with Red Velvet. Just do an internet search for Magnolia Bakery's Red Velvet Cake, and it will take you to it.
I really think that if you put the cream cheese as the filling, it would be fine. I would just refrigerate it well before delivering. You can use butter cream on the outside as the icing. Another option would be to buy cream cheese flavoring and add it to your butter cream frosting. That is normally how I make my cream cheese icings, because by law I am not allowed to make anything refrigerated since I am a home baker.
I can attest to the crusting cream cheese icing!!! I used it on a wedding cake that had an outdoor reception in July, and it held up wonderful!! So if you think that is what he wants, I would give it a try. I also think the oreo sound good too though.
I use LorrAnn cheese cake flavoring in my regular buttercream to make a faux cream cheese. It has a nice flavor.
