I just wanted to pass this along, I bought a gluten free cake mix called Glutino white cake mix, and I have to say how impressed I was with this mix. First of all it rose during baking just like a regular cakes, this is the first gluten free mix I have bought that did rise and the taste I was also impressed with how good it was . I doctored it just like regular cake mix and I was so suprized at how good it was. You can get this mix at Wild Oats. icon_smile.gif This is an excellent cake mix .

thanks for the tip!! i hope they carry it soon in my areat too.
I have bought some from Wholefoods store but it doesn't rise. I have only made it once and i thought i did something wrong, it was super watery compared to the regular cakes.
When you say doctored, did you add pudding? or something else?

thanks,
Kat

I used milk in place of the water and I added vanilla extract then just oil and eggs but I am careful to use the exact measurements of oil and milk. I have found I cant play around with the mix as much as regular cake mix . HTH icon_smile.gif
