I have a bride who wants to save some money by having a smaller "show" cake and then sheet cakes in the back for serving. The price I had already given her was $2.50/serving. That's for your basic four layers of cake, three of filling..buttercream icing, simple design.

Ok...so, how much do I price the sheet cakes? Do I do it by serving? How do I figure how much to charge for that? I guess the problem I'm having is that, it's still the same amount of cake and just about the same amount of icing. So is the price really that much different?

Any advice on this would be GREATLY appreciated! Thanks!! icon_biggrin.gif

For a simple sheet cake for cutting, the time in decorating is somewhat less. If I charge $2.50 for the main cake, I charge less per serving for the sheet cake. It still takes time and ingredients, but less technical skill.

This is how I deal with your situation:

My wedding cakes start at $3.50/slice. The minimum show cake is 105 servings (6,10,14). I will do kitchen cakes (which are exactly the same as the display cake- 4 layers of cake, 3 layers of filling, 4" high...NOT sheet cakes) that are frosted but have no decoration, not even borders for $3.00/slice. This really only saves them any appreciable amount of money if the display cake is $5.00/sl or more. This is effective if they have a ton of gumpaste work or if it is fondant covered. It doesn't sound like your bride would save much.

What would you normally charge for a plain sheetcake? I would think about that first. Is it priced per serving or per cake? After that, you still need to add in the show cake which is priced at $2.50 per slice. If that saves her money, I'm sure she will want to go that route.

Ok...i thought about the whole "how much would just a sheet cake be?" thing. But then I realized, that the sheet cake for a wedding would be like two cakes in one. Here's how...a plain old sheet cake would be one layer and iced. Maybe it would have a filling. But for the wedding, in order to match the show cake, it would be 4 layers of cake and 3 of filling. So really..that's like two cakes on top of one another...get me? icon_confused.gif

The latest math i did was trying to figure out how much it would cost just to make the cake. it turned out to be about 45$. If you did the whole x's2 thing..that would mean, an 11x15 would be 90$. THHHHEEEEENNNNnn..if you did the math to figure out the per slice price...it would be about 1.50 / serving.

UGH!...sooooo...I guess it's just frustrating to me, bc you still have to make all that cake, ya know? And I agree with AMW, it really isn't that much of a savings, especially if you consider the very very simple buttercream white on white design she is considering. Oh! and...flowers from the florist!

Oh yeah..and AMW..the cake I'd be making is just the size of yours...6,10, and 14. Although, I didn't count the 6 in the servings, bc she wants to save it. The books I was looking at said I would get 91 servings from it. You had mentioned 105...are you including the 6in, too?

Yes, it does include serving the 6". I never recommend eating something that has been frozen for a year (it tastes like whatever else was in thier freezer) so if they want something for thier first anniversary, they are welcome to call me a couple weeks in advance and I'll make them a 6" for free. Everyone loves this idea when I am selling the cake-they can't believe how considerate I am- but in reality, only 2-3 people per year actually call for the cake.

Oh my gosh!!! That is SO funny that you say that! I literally JUST got off the phone with a bride's mother, for whom I did the cake in June. She was saying how good and delicious it was... So good, that her daughter and son-in-law took their top home to save it...but within a few days took it back out to eat it bc they liked it so much!! (I take that as a nice compiment!) icon_biggrin.gif

Anywhooo..what I said to her was...that come next year for their anniversary, if she could plan to call me, I would be happy to "redo" the top of their cake and she can surprise them with it!!

So, as far as your business goes, the customer has to remember to call, right?
