I usually price my cakes per serving plus a decorating fee. How do you guys estimate servings for 3-D cakes?

For example, does a 6-in ball yield 10 servings (like a regular 6-in cake) or 20 (like 2 6-in put together)? I'm also trying to estimate servings for the 3-D Wilton Choo-choo train pan (10 x 6)--I'm guessing 25 servings (like a 1/4 sheet)?

I'd appreciate some tips so I can standarize my calculations.

Here's a link from Wilton regarding their shaped pans:

http://www.wilton.com/cake/shapedpans/pansearch/index.cfm

You select the pan you want from the list, and it's a download of the pan's info (pdf file). It should give you the information you need, including baking times and servings!

Hope this helps!

I wonder if you could figure out the number of servings by numbers of cups of cake batter used to fill the pans??
