Well I'm not licensed but I do use box mixes at times. It depends on the recipe I use. I usually doctor them up. I never go by the instructions on the cake box. There is a book called "The Cake Mix Doctor", it is a very good book. All recipes I've made from this book turned out really good and I always get rave reviews on them.

Try searching this site for threads containing "box mix" or "box versus scratch"

You'll get some interesting reading.... icon_lol.gif

I posted the same question yesterday because I like baking from scratch. However, some people do use the boxed cakes specially for kids birthdays..some people do them from scratch. It depends on your customer and what they want. I will ask them what they want.

I do not ever ask the customer if they want a scratch or box cake ~ 99% of mine start from a mix. The customer wants a cake that tastes good, and looks good, they do not usually care how the end result is achieved!

I have been selling cakes for a very long time, and have never had a person specifically ASK for one or the other.

Thanks for any replies! I have been using cake mixes because I have the need for tested products that are safe for kids with allergies. I alter the "recipe" a little depending on what they are allergic too, but then got to thinking that maybe it would not be legit to use boxed mixes! icon_smile.gif

boxed, boxed, boxed!

No one has ever asked. They do often say how much better my cakes are than a mix icon_rolleyes.gif - I just say thank you.

I don't even doctor them.
