I have my first wedding cake order and the bride is asking me for a cassada filling. I have done a search on here and have seen many references for cassada cake, cassata filling, and cannoli filling. I am not sure which recipe I should use. PLease help!
The bride wants a four tier wedding cake with every other cake to be layered with this cassada filling. I have never made a cassada filling so I am not sure what to use as a recipe.
Also does any one have a scrollwork template out there that can be used on buttercream? I have the plastic scroll imprints that you buy at the store but these never seem to work well on buttercream?

I would suggest trying all the recipes and see which one you like best, or let the bride do a taste tasting with like 3 different recipes for this type of filling I use pattern presses on buttercream but go over the marks with a tip 3 that is for scroll work, I don't know how else to help you..
