This is really good!! It does call for raisins, but just leave them out. You can also add drained pineapple if you want.

I use betty crocker's spice cake mix and add maybe a cup each of grated carrots and chopped pecans. I like it and I don't usually like carrot cakes.

Just add grated carrot and some drained pinnapple chunks to your mix. Just did this in mini muffin pans for a wedding and piped on cream cheese frosting. YUM! they were a big hit.
