I want to know how to get a brick or stone pattern on fondant. I am going to attempt a castle cake for my DD's b-day next weekend.

What so you use? Do you roll it out on something, then put it on the cake, or do you put the pattern on after it's on the cake?

they have impression mats you can use.
sugarcraft has some and found some on ebay.
You can also go the rolling pin route, but that will cost you more.
