what is the difference between fondant, marzipan, and gumpaste? is there specific times you would use each one?

I'm not sure about marzipan other than it is made with almond paste, but the difference between fondant and gumpaste are simple. Fondant stays softer longer. Gumpaste hardens quickly and stays pretty strong. You can also mix equal parts fondant and gumpaste which I usually do so I can work with it a little longer, but also have something keep it's shape and dry hard.
