I just had someone call asking for a cheesecake for this evening...
The one they requested cooks for 2 hours and then is supposed to refrigerate for 12 - 24....can I put it in the freezer after an hour or so to speed up the process?!?!?!?!?! TIA
I have made a cheesecake before and put it in the freezer for a few hours. It worked fine. but mine was a basic cheesecake. soo it may depend on your recipe.
You are so helpful...I was just afraid to, because I thought it might make it grainy?
The only thing out of the ordinary is that my recipe has white choc in it??? What do you think?
well i have made a white chocolate one before sooo i think it will be fine. perhaps if you have time put it int he freezer for 2 to 3 hours and then in the fridge for 2 hours . that way it wont be frozen when your customer picks it up.

..that's a tricky one! Cheesecakes tend to crack if exposed to a big temperature change!
