Picture this.....I get my very first request/inquiry into a wedding cake. The bride to be wants a mango filling! Never heard of it. Has anyone else? Would I use a tradional fruit filling, substituting mango for another fruit? Any help appreciated icon_eek.gif

Is there a mango preserve you can use? Also, do a google search; I'm sure something will show up!

I have some Indian customers who actually got me started doing a mango cream filling (mango is a popular fruit/flavor in some parts of India). I use canned mango puree (it's wonderful) and mix it with whipped cream. It is soooo yummy! Maybe this would work for you?

ive made and had great success with a mango curd filling, goes great with a lime chiffon cake, or many others im sure.

you can puree up mango and add it to IMBC or SMBC

I just bought some Mango Jam at Costco in August...(in Canada). They were "Philippine Brand" , two jars for 8 dollars, I think..I used the Lorann Gourmet Flavour "Mango" in the cake mix (extended) recipe (with sour cream) and then I warmed up the jam and torted the cake and had four layer with the jam brushed in between. I also added the flavour to my buttercream. Although I did not eat it, my daughter (and her class) and mom said that it was delish... I was just at another Costco this week and forgot to look for the jam. I will definately try it again.
The mango cream filling sounds good, but I wanted to make sure this could last a few days without worrying about the fridge.

I've heard of using the Mango flavored applesauce in you white cake instead of oil to make it Mango flavored. YUMMY!

You can get mango preserves in the Latin-American section of some supermarkets, especially in Wegmans.
This can be added to your buttercream.

Mango filling is a really common thing in Mexico. I was born there and of course love, love mangos. The way I've tried it is basically mangos in heavy syrup with chantilly cream (It is some kind of whipped cream).

You can try a mango mousse.......

2 cups mangos (try fresh mangos or canned mangos in heavy syrup)
1 can of condensed milk
1 can of MEDIA CREMA NESTLE (you can find it at the latin food aisle at walmart) or substitute for 1 cup of heavy cream. (I include a picture of the can)
1 teaspoon of lime juice
1 Tablespoon of unflavored gelatin
1/4 cup water
2 egg whites beaten until soft peaks

In a blender or food processor mix mangos, condensed milk, MEDIA CREMA (or heavy cream), and lemon juice. Leave mangos in small chunks, don't overmix.
In a small pan put water and gelatin, let it rest for about 5 minutes. Then in low heat dissolve the gelatin.
Pour gelatin over mango mixture and mix by hand. Finally fold in egg whites. Refrigerate until thick.


You can find mangos in a can (not my favorites, I prefer fresh but of course here in the US they are $$$$). Look at your local grocery store in the latin section.
