I need some advice. A friend and co-worker of mine who also does cake has asked me to help her with an upcoming wedding. She wants to bake layers, ice them, and then have me deliver them, finish decorating, and set up the cakes. I have no idea what to charge her to do this. These cakes are HUGE... The brides cake is a 4-tier square cake with a 16-inch base and the grooms is a 3-tier with a 14-inch base. Any advice?
That would make me nervous. Have you ever worked with her cakes and icing? I know everyone has their own recipe and that could spell disaster if they are different than what you are used to (stability of cake, icing consistency, etc.).
Sorry I'm no help though.
Oof, I could see this becoming a problem. Even if you get a waiver saying you aren't responsible, she could get mad if something happens. We'd have to be good, good friends before I trusted that she wouldn't be upset at me if I screwed up. 4 Tiers? To be assembed on site I hope? And the 3 tier as well really, with that big of base I would assemble on site. If that was the deal I would feel alot better about it. Rather than transporting a complete cake. And then you could ask to do the doweling yourself as well, to ensure it is done how you like it done.
But you asked for a fee. Depending on how far they are away I would break it down. How much do you think is fair for delivery? For set-up? For decorating? Then tell your friend the per hour fees for each and give her a tally at the end. With a minimum of course.
I would not touch anyone else's cake for any price. You have no control over quality, and you would be responsible for the finished product.
