Flag Cake opinions

I am making this Flag Cake for the 4th of July picnic we are going to attend. It is at the neighbor's house, so refrigeration will not be an issue (I can just pull it out when needed.) Instead of decorating with buttercream, I plan on using berries (red and blue, of course).

You are supposed to torte the layers and then fill with buttercream. However, I'm thinking that that would be WAY too much icing (and I have a good recipe), so I was considering using whipped cream.

What do you think? Would it be sliding all over the place? I would usually test something like this out first but don't have the time.

Thanks for your help/opinions.

Very cute! I've never used whipped cream but as long as it's in the fridge I would think it would be fine.

I WOULD LIKE THE RECIPE FOR THIS. I THINK THAT THE WHIP CREAM IN BETWEEN WOULD BE FINE AS LONG AS IT IS REFRIGERATED. THAT IS SO COOL. I NEVER SAW IT DONE LIKE THAT BEFORE. HERE IS MY E-MAIL ADDRESS TO SEND THE RECIPE PLEASE. THANKS. HOWNCATH@NETSCAPE.NET

It's not so much a recipe as instructions. A lady named Rhonda from a Wilton forum posted this--so I will not take credit here. Here you go:

2 - 12" red layers (she used food coloring in white cake--said red velvet was too dark.)

1 - 6" blue cake

Tort the red layers into layers (4 from one and 3 from the other).

Using the 6" pan as a guide, cut a center circle from 3 or 4 of the red layers.

Stack them all using butter cream between, having the cut-out ones on the top.

Lightly ice the edge of the blue layer and drop it (or press it) into the hole.

Ice and decorate.

It must be served cut "spoke" fahion to show the flat.

It is much easier to serve if it is smaller a 9" or 10" with a 4" or 5" blue layer

I use heavy whipping cream, 10X sugar and vanilla. Whip until stiff, then make a damn with buttercream and spread in between layers, top that with fresh sliced strawberries ( and /or berries) and put the next cake layer on top of that. It's delicious!

This is SO what I'm going to do!!! That sounds awesome with the addition of sliced strawberries!! I was planning on decorating the outside with blueberries and raspberries and was trying to figure out how to incorporate strawberries also.

Wow, that is awesome! Complete with 13 stripes.

I would have copped out and used only like 3 or 4 red layers. Strawberries and blueberries on top would be so yummy!
