I am going to be making a bouqet in the next week or so and I have a quesiton. My customers don't like the royal icing at all. Is there a receipe out there for a cookie icing that taste more like buttercream that will still harden enough to put a plastic bag over and make a bouquet? If I added meringue powder to my buttercream icing would that make it harden?

I have recently tried Alice's Cookie Icing and liked the taste. It has butter in it so you get that yummy taste but it does not dry as hard as royal. I like a softer, buttery icing myself so this was a great recipe for me!

I'm with you...I'm not really fond of royal icing. (I don't want my cookie crunchy.) After experimenting with 5 different icing recipes last weekend....I finally settled on Toba Garrett's Glace' Icing (it's in the Recipes section). It's easy to work with and it dries hard enough to bag (after 24 hours) but it isn't crunchy. I do add 1 Tbsp of butter for each pound of sugar because I like the glossy look it adds. I'll post my photos tonight...I made 4 dozen school cookies yesterday and they turned out cute. icon_smile.gif

Although I STILL like the taste of buttercream better....this is a good compromise for me.

Let me know if you discover other options.
