Hi, I really need a good recipe for either choc fondant or preferably rolled Buttercream from scratch. I live in China and cannot buy it ready made. Need to make the cakes on Wednesday so please just throw ANY recipe you have into the ring and how you find it. PLEASE, I really need you guys right now

I use the MMF here from CC and add the 1tbsp. cocoa powder to it and 1oz. melted chocolate. Here is the link.

It tastes great but I usually do not need so much powdered sugar, I sift it and add it gradually to my KA as I mix it.

Hi Tracy, thanks. But at the moment I can't find Marshmallows anywhere. It's driving me bonkers. Anyone else? PLEASE?

Anyone? I really need it for tomorrow, so I need to make it today in case it has to rest. It is a very short notice cake and she just phoned and doubled the order. She's the owner of the Clubhouse restaurant here and I want to really WOW her (and her customers of course)

Have you tried the rolled buttercream recipe from this site? I can't help you right now w/ a choc. fondant recipe.... here's one using Wilton stuff - I don't know if you have that available either:

Good luck! I'm not sure what ingredients you have available to you so it's hard to give suggestions!

Well I have crisco, glucose. cornsyrup. Can't get chocolate at the moment, too hot and the new supplies haven't come in yet. I have cocoa powder though. Icing sugar I have. I also have some left over modelling Chocolate, but not a lot.

I think you can make the rolled buttercream w/ those ingredients.... good luck! Sorry we couldn't be of more help!

Here's one---I haven't made it yet, but it was in my notebook.

1/2 lb. white candy coating
1 lb. light chocolate candy coating
3/4 cup corn syrup

Melt coatings, add corn syrup at room temp. Stir to combine and spread out on plastic wrap.

4 lbs powdered sugar
1 cup cocoa powder
8 TBSP hot water
2 TBSP instant coffee crystals
1/2 tsp. salt
4 TBSP Crisco
1 cup glucose
2 tsp vanilla

Sift cocoa and powdered sugar together into a large bowl. Make a well in center. Dissolve coffee in hot water. Add the rest of the ingredients to the coffee and heat until shortening is almost melted. Pour the coffee mixture into the center of the well of the powdered sugar mixture. Stir with a spoon until thick then work with your hands. Turn out onto powedered sugar dusted board and knead until smooth. Put chocolate mixture on top and knead the two together adding sugar if necessary to make a smooth, dough-like consistency.

The baking911 web site has a recipe for chocolate fondant also that doesn't use chocolate coating
