How Do I Make Raspberry Cheescake Filling
Decorating By Christy1911 Updated 19 Sep 2006 , 2:01pm by beachcakes
I read about someone using a raspberry cheesecake filling - does anyone have any recipes. I have tried 3 different ones for just raspberry filling and they are always too thin to use. I thought the raspberry cheesecake sounded thicker. Or if anyone has another filling suggestion for use with a french vanilla cake I would appreciate it. It will be covered in buttercream. Thanks
I'm sorry I don't have a recipe, but you can buy the cheesecake sleeve fillings and mix some raspberry into it. I've also baked crustless cheesecakes in cake pans and used those as a filling layer. Very yummy
i use a raspberry/ cheesecake filling.. but i use an actual whole cheesecake (with no crust) as my filling and a thin layer of raspberry preserves on top of it... its awsome
Just saw in the grocery store a tub (like a tub of margerine) of ready mixed cheesecake filling- don't remember the brand-maybe Kraft. Check the refrig section of your store. Try warming some rasberry preserves (just to mix easier) and mix with the cheesecake filling until you get the desired taste and texture. That's what crossed my mind when I saw the product, but I will probably mix it with blackberry preserves. Good luck!
So when you make a crustless cheesecake you make the cheesecake the same just put it in a regular cake pan? (Of course with out the crust) Do you bake at same temp and for how long usually?
Hello,
this may not be quite what you are looking for, but I just made a raspberry truffle filling. The recipe uses cream cheese in it and it makes an excellent filling for cake - it sets up very well and tastes great. I found it on the baking911 website.

I used baker's chocolate instead of chips.
When I made the layer of cheesecake for the filling, I used my normal cheesecake recipe. Make sure you put a parchment circle in the bottom so it comes out easily. I divided it among three pans so the filling was maybe 1/2" thick. You really have to watch it, it only takes a short while - I don't recall exactly, but i started checking at maybe 10 - 15 mins?
My most popular filling is rasp & cheesecake. I buy the jello powder . I was buying it from the market until I found a supplier with the lrg bags of 1 kg bag of jello cheesecake mix filling it takes 6 cups of milk so I make the whole batch and freeze what I don't need until the next time. to fill my cakes if torted once I put a thin layer of rasp filling and a thicker of the cheesecake. If in 2/ one layer of rasp 1 layer of cheesecake. Seems everyone wants it.
I want to make sure I understand - if I use the powder would I mix as directions say to make the cheescake and let it set. Then put one small layer of raspberries directly on cake and cheescake mix on top? What do you use for the raspberries? Frozen or canned pie filling (or do they even make canned). Also, does this need to be refrigerated b/c of the milk in it? Thanks - party is Sat and I need to practice before real cake day.
Beachcakes, If you use the cheesecake as a filling, do you have to keep the cake refrigerated? I know that may seem like a silly question, but sometimes I get confused as to what needs to be refrigerated and what doesn't. For example, if I were to do this filling for a wedding cake, would it be OK? Usually the cake is set up before the wedding and sits out for awhile. I've heard of people using cheescakes as wedding cakes, but I thought cheesecakes had to be refrigerated?
I just saw the Raspberry Truffle Filling given by "Patooty70". I can't wait to try it! I just used the last of a Raspberry Creamcheese filling which was wonderful. Thank You CC.
mlynnb, yes cheesecake does require filling. But if it were refrigerated up to delivery, I think it would be fine. I've never done it for a wedding cake - but I've had cheesecakes sit out at home for a few hours and no one's gotten sick, they just got a little soft. I've seen cheesecake wedding cakes so it must be possible!
Oh my! It should say "cheesecake does require refrigeration" not filling!! see what happens when i post from work?
