The cake needs to be done Thursday night. Is tonight too early to do it? I was going to practice is tonight and if I like it I will use tonight's FBCT for the cake. Is that ok or should it be done closer to when the cake will be done. What happens when I take it out of the freezer? Does condensation form? Sorry for all the questions, but this is my first time I'm going to make one and it's for a paid cake so I need iit to be really good.

I have done FBCT's up to a week in advance, with no problems. After I froze it solid, I slid it into a Ziploc freezer bag so that it would not dry out! (Leave it on the board you worked on or a stiff piece of cardboard!)

If yours won't fit in the bags I would just wrap well with Saran!

I also place it in a tupperware container for extra security and have also left it in the freezer for days.
