How Do You Know A Cake Recipe Can Be Used For Cupcakes???

I'm trying to make cupcakes for work monthly bdays TOMORROW I wanted to do some cupcakes.....they want carrot cake & a spice cake!! I've made both of these w/a doctored mix before but wanted to try some scratch recipes. I have a few, but how do I know they will work as cupcakes??

As far as I know, any recipe would work. Just watch them, because the time will be different.

I've done it before with a carrot cake mix it came out fine very very moist.Just be careful and watch them as bigfatmamakat says the timing is definetly different..

ok, i've read a few times that not every cake mix will work as a cupcakes and i've tried a few chocolate scratch recipes as cupcakes and they flopped!! but not sure if that was b/c i messed up the recipe or not!!

i've had no problems w/using a cake mix from a box as cupcakes.....but i'm starting to experiment w/some scratch recipes and i have a very good 'test' group....so was going to try the scratch thing again w/them.

don't have much luck w/the scratch recipes in a reg. pan.....so not expecting much w/the cupcakes!!

Ouch! I suspect you are having trouble with butter cakes or sponge cakes, they have techniques that needs to be followed for good results. Carrot cakes and spice cakes are frequently oil or mayonnaise cakes and they are generally easier since they are pretty much dump and stir. The only warning is if they require buttermilk and you don't have any, use sour milk (add a tablespoon of vinegar or lemon juice to a 1 cup measure and then add your milk- use less souring agent if you need less than a 1 cup. The reason is that the leavening agent-soda- needs acid to work. ) Another possibility for poor results is that your leavening agent -baking soda or baking powder- is out of date. BTDT Check the can or box date.

Also just because recipe says it is a bundt cake doesn't mean it can not be used for cupcakes, just reduce the baking time.
