Taking A Cake To Yosemite

Bride wanted 4 layers (french vanilla cake, lemon filling and lemon cream cheese frosting)

First I want to say how much I hate frosting with Cream Cheese frosting. The frosting tugs and makes it impossible to get smooth. The VIVA trick works "ish", as it makes the frosting not lumpy, but gives it the texture of old leather!

The wedding was at a chapel in Yosemite National Park and the reception at the Wawona hotel (beautiful location... but INCREDIBLY WINDY ROADS).

We almost got to the hotel event free, but I think my husband forgot we were transporting cakes and took a corner VERY SHARPLY and threw one of the cake layers into the seat!!!!!!!!!! That took a chunk out of the cake.

The wedding was at 1pm and the reception at 5!!!!!! (and of course everyone is "stuck" in Yosemite, it isn't like they could go home and come back) so I opted to not have any decoration on the cake at all and would use the time in between to stack and decorate. So I put the cakes in the Wawona hotel's walk in fridge.

When I got back to the hotel after the wedding (my daughter was the flower girl by the way... so extra stress!) the cakes in the fridge had been bumped by the staff. (Can't get mad, it was not a dedicated fridge like I thought that was available, that is what you get for putting it in a fridge that gets used a lot. I'm grateful that the staff let me put it in the fridge!)

So I had to transport the 4 layers on a cart across the campus of the hotel (of course the kitchen and the reception hall were not in the same building and had to be taken down a steep windy path), stack the cakes, attempt to fix mashing, decorate the 4 layers and apply flowers.

I finished literally 2 minutes before the bride arrived.

WHEW

You did a great job! Cream cheese frosting is very challenging, but it looks wonderful!

I just finished a devils food with crusting cream cheese and it looks horrible, but she's getting it just like that. I was up all night (literally) Fri night for another huge cake and I don't have the energy. Your cake is absolutely fabulous! I wish I could have made my icing look that smooth.

After all that it looks amazing! I was picturing an awful mess but no you magically made it beautiful thumbs_up.gif
