I read instructions on how to make SMBC,,, Just a question regarding cooking egg whites with sugar, should the bowl be dipped in simmering water? or should it be on top of the simmering water just like a double boiler does?

k, I will try it. if it's better than IMBC then I might use it instead 'cause it's more convenient (minus boiling water and sugar) LOL
