I read instructions on how to make SMBC,,, Just a question regarding cooking egg whites with sugar, should the bowl be dipped in simmering water? or should it be on top of the simmering water just like a double boiler does?

I do mine with a high powered hand beater over a double boiler.

k, I will try it. if it's better than IMBC then I might use it instead 'cause it's more convenient (minus boiling water and sugar) LOL

Kettlevalleygirl, sorry I'm not trying it this week. But I'm sure it will be easier since I've done IMBC several times already...
