We use Satin Ice (I believe, I'll double check tomorrow, and post if different) for the fondant, and we make our own buttercream actually. Duff just used that premade stuff for the tonight show since he really couldn't make it in his hotel room. There is also the recipe for our buttercream on the foodnetwork page, and he did a demo for it on the Elvis Birthday Challenge.

I'd be interested in learning what brand of fondant you use too - I can't seem to get mine to mold at all and you all seem to have no problems - those crabs and well just everything else you've made on the show out of fondant seems to hold its shape well and looks so great.....

Thank you so much Mary! We have always used MMF and I finally talked my DH into switching to premade. He said I could order only if I knew what Duff uses! I am placing an order today!!

Do you guys flavor the Satin Ice at all? I've never used it. I use premade fondant and add flavors to it and it tastes better.
I love his show too - and being from the Baltimore area just makes it that much more fun for me! It's cool to see all the places on TV that I get to see in person all the time and to know everything he's talking about when he refers to different things about the city. He cracks me up and so does his staff - what a place that must be to work for - I can only imagine that must be a great feeling to get to have fun and work with your friends everyday doing something so fun and creative.

what time is it on??? I live in Vancouver B.C. and I can never find the time or I think I have the time and it is never on...can anyone tell me if they know the time in B.C.???? this sounds like a fun show to watch judging by all the posts.....thank in advance...
Did you try searching Food Network? I think they list their times in Eastern Standard Time - so you would have to adjust if you are not in that time zone.
I'm guessing this is the show - the link has pictures and the description of the Challenge - looks cool!!!

Oh yeah Colette has judged a couple - in fact, she judged Duff's first competition and he told her that wasn't fair - for her to be a judge on his competition I think he worked with her once - or apprenticed with her maybe? Or maybe I'm nuts and they just met somewhere and became close friends..... they even had the same theme for one challenge together!
Yeah I remember that chalenge, it was the surprise theme, it was sports, and both choose fishing, Collete's cake was the winner and Duff's cake colapsed before they moved it to the table, bummer ...
But it was sooooo funny how competitive they were, but at the same time very profesional and never losing the sense of humor and having fun doing what they do best: CAKES!

I was just curious to know if anyone has tried Duff's French Buttercream recipe. Does it taste better than regular old Wilton-style buttercream? Is it easier to spread?
OMG I use Duff's BC for everything! It is AWESOME! I love it. It's not as sweet as the wilton by far. It's very buttery and rich. I love to add melted chocolate to it. VERY easy to spread but it doesn't crust at all...which is fine by me. I get mine so smooth...and refrigerate it in between the crumb coat and the final coat.

Where can I find the recipe for Duff's buttercream or did someone try it at the bakery? My kids and I love his show! Can't wait to go home to Virginia over Christmas so we can go up there!

I just watched Ace of Cakes for the first time last night. They are so cool! I'm definitely hooked now! I loved the black and white wedding cake!
I watched the cookie episode last night with my 14 yr old daughter. We were discuccing the fact that my brother & SIL have July B-day's. The 2nd & 4th. SOOO, I might try to put fireworks into his cake. My brother is the top jokester in our family. He loves to prank someone. Guessing I like the plane idea. Not sure yet. I do own two fire extinguishers.
I sure did.. I like this show. They are kind of comfortable doing what they need to do.. it's not a formal format.. They talk "normal" to eachother, it's not like watching someone doing a demo on cooking.
It's fun to watch them decorate cakes and Duff does not seem
stressed out. He is somewhat relaxed..
