Freezing Iced Cookies....????

HI

Can you freeze already decorated cookies iced in royal icing? Would love to know as this could really help me out!

icon_cool.gif you sure can. i did a bunch of flowers not to long ago, i had so many to do, so i had to freeze them. they were as fresh coming out as they were going in. no problems with the icing either.

I'm so gald you asked this question!

I've never tried freezing decorated cookies... what's the process? do you freeze them and then stack them? Waht do you use between layers? What do you package them in to keep the "icky freezer smells" and freezerburn out?

You can layer them with waxed paper or parchment.

To protect from smells, put them in an airtight container, or wrap then a couple of times in heavy duty foil.

If there are bright colors, thaw them in a single layer on sheet pans to protect from color bleeding.

I freeze my iced cookies all the time. I usually ice the cookies with royal icing. Let them dry thoroughly. Put them on cookie sheets in a single layer and set them in the freezer to freeze. Once they are thoroughly frozen, put them in a container with wax paper between layers. Put the cover on your container. If you'd like, you can wrap the container in plastic wrap or aluminum foil to seal it completely to keep out any extraneous odors.

To thaw the cookies out, set them on parchment paper or brown paper bags in single layers at room temperature until thawed. I do this every year at Christmas time.

I also did it when I made cookie bouquet favors for a baby show. Noone knew the cookies had been frozen. They were just like fresh baked.
