I know this isn't about cakes so I am sorry but I am looking for a wonderful peach cobbler recipe. I just picked up a 25 lb box of Utah peaches today and I need some different recipes. Thanks

I suggest you go to allrecipes.com, they have wonderful recipes on there. I love the site. I checked and they have several Peach cobbler recipes also. They are rated on a 5 star basis and people tell you a review on it. Hope you like it. icon_smile.gif

Easy Peach Cobbler

1 stick of butter
1 cup of milk
1 cup of flour
1 egg
1 tsp cinnamon (optional)
Fresh peaches

Melt butter in baking dish, mix milk, flour, egg and cinnamon in seperate bowl and pour over melted butter. Add fresh peaches and bake at 375 until the top browns.




Peaches and Cream Brulee

1 cup heavy whipping cream 1/2 vanilla bean or 1 teaspoon vanilla extract
3 large egg yolks 6 whole ripe peaches
4 to 6 teaspoons sugar

1. Place cream in a medium saucepan. Split vanilla bean in half lengthwise, scrape in seeds, and add bean pod; bring to a simmer, and turn off heat.

2. Combine 1/3 cup sugar and egg yolks in a mixing bowl, whisking until smooth. Slowly add warm cream to egg mixture, whisking constantly. Set bowl containing egg mixture over a saucepan of simmering water. (Do not allow bowl to touch water.) Whisk mixture constantly about 9 minutes or until it reaches 180 degrees and coats back of spoon. Remove bowl from heat, and place in an ice bath, stirring occasionally with a spatula; allow mixture to cool completely. (Or cool to room temperature, cover, and chill overnight.) Mixture will thicken slightly while cooling.

3. Cut tops off peaches, and carefully hollow them out, discarding pit. (Slice a thin portion from bottoms, if needed, to help peaches sit upright. Fill each peach with about ¼ cup custard, smoothing so mixture is even with top of peach. Refrigerate until ready to serve, up to 3 hours.

4. Sprinkle a thin layer of sugar onto each custard-filled peach; caramelize sugar using a kitchen torch, keeping torch moving at all times for even coloring. Serve within 1 hour of browning sugar.

Don't you just love allrecipes.com? I start looking for something on there and I'm as bad as I am on CC. I have found some real good recipes there for different functions that I have been to and banquets that I have had to cook for Lions Club, etc.

Christy, thanks so much for the recipes. I will be trying them this week. The cream brulee sounds great but I don't have a kitchen torch so I will have to find another way to caramelize the sugar.
