Who makes their own? Who buys it already made? Why do you prefer one over the other?

I've never tried it but keep seeing it on the foodtv challenges.

Simple post this time!! icon_biggrin.gif

I do not recall ever seeing modeling chocolate sold in stores or online. If you have a source, please share.

SpottyDog - make tootsie roll roses, roll them out into a double-strand rope border, cut them down and make chocolate pearls.

I made it from the recipe here too. It is sooooooo simple, and I'm sure it would be cheaper to make your own. EASY-EASY-EASY!!!

not to mention you can control the quality of the chocolate based upon your needs.......sorry but I don't use the expensive chocolate when I'm playing around with making stuff or when it's for a kids party LOL The choc. chips work well enough for that and hey, they taste like tootsie rolls....I mean when it comes down to it who doesn't love a tootsie roll???? LOL

I found it here as well http://pastrychef.com/htmlpages/ingredients.html although I've never ordered from them. I found them when I was on a search for really good chocolate.

I just make my own, it is very easy to make and work with. I just used the recipe in the Wilton book. I made an armadillo head and tail with it for a cake and it came out fine. I imagine the store bought may be a little pricey, have never bought it.

I've tried making it once, and it was an oily brown mess. The cocoa butter (melted) separated from the rest and it was unworkable, I had to throw it out and felt terrible wasting the kilo or so of dark Lindt couverture.
It also had a bad mouthfeel - really chewy and unpalatable. I've been put off by it since, but perhaps there is a better way ...

Albert Uster sells it:

Confiseur d'Or White Modeling Chocolate Paste for Decor - 13.2 lbs
http://www.auiswisscatalogue.com/store/merchant.mvc?page=ASC/PROD/1j_ENROBING/208004

Pricey, though---$10/lb.

I've used it made with candy melts--works great and cheap--and with real chocolate--tastes super but more expensive (but not $10/lb !).
