I have a request for an anniversary cake with cream cheese frosting, but I have never made it before. I guess this might be a silly question, but here it goes. Does it smooth? What kind decorations can you use on it? If they want flowers can I do royal icing and the cakes will need to be refridgerated right up until they are needed to serve? I have always used BC, fondant and royal icings, so I'm kind of lost! If anyone has a picture of a Cream Cheese frosted cake I would LOVE to see it!

I used the Wilton cream cheese icing recipe, but replaced 1/2 tsp of the milk with vanilla extract, and it was delicious!
I live in LA, so it is very humid here and I have lots of problems with my icing in the summer, especially icing made with butter. It was so soft and runny. I had to add meringue powder to it. I couldn't use my normal smoothing method with it, 'cause it didn't really crust, so I just had to ice it as smooth as possible with my spatula.
I don't know if most people have these problems in the rest of the world though! It seems to be harder for those of us who live down here in the humid swamp land!!
