A friend of mine asked me if I could make some cookies for a convention and they need them by Oct. 13. Guess how many cookies they need?

435!!!

I dont think I can do it. LOL

What kind of cookies do they want? No fails with royal icing, wrapped in cellophane will last for ages, so you could get started on them now icon_smile.gif !

Oh, I bet you can!!!! But I would make sure I do the math on how fast you can crank out cookies and make sure you have time! I have not had any big orders like that and can only do 12 cookies (two trays / one rack) every 8 minutes (and keep the cookie constantly going into the oven) and when I did the math ----that was like 5 hours of baking! icon_eek.gif Yikes! Hope you have a bigger oven than me!!!!

I have not tried baking on two racks yet. I just use the one rack but if I could bake on two racks that would be 24 cookies every 8 min. and cut the baking time down to 2.5 hours.

Can you tell I have been figuring this out.... I have a order of 185 cookies for December and I have already employeed two of my neighbors to help clamp and tie all those bags!!

Good Luck!!! What a great opportunity and over 400 new potential clients! I print out a little mailing label 1.5 X 1 3/4 with only my website on it and stick it to the back of each bag.

You guys are very encouraging. She wants them done like the Flour Pot does theirs with fondant. Im not sure about the shelf life of those LOL

I am concerned about time is all. I could try and make my dough now to save time and freeze it as time gets closer.

She wants No Fails btw. I am really concerned about the fondant but I cant pipe straight outlines on a cookie to save my life hahahaha

I made no fails with mmf and choco-pan fondant with royal icing accents and frozen individually wrapped and sealed in plastic container. I had to go out of town last week but needed the cookies for an event on monday. They were in the freezer for 4 days and came out just the same as they went in. MMF is a dream to work with, I especially liked it the first day it was made after it cooled for an hour or two. I was afraid if I let the cookies sit all week they would be stale but if I froze them they would be ruined. If I had known how they would turn out I would have made them a few days sooner. I often freeze my undecorated cookies. HTH

You can do it!

Make your dough and start cutting your shapes now and freeze them, then all you have to do is bake and decorate.

If the design isn't too complicated, you'll be done in no time!

Just pretend you are doing your Holiday baking!

Can someone help you with packaging them? My DH likes to be helpful with that part.

You can bake and freeze your cookies in advance. It may be difficult, but you can do it! Think of it as a Food Network challenge!!!

You CAN do it.

My sister and I made 2,700 in 4 days, all individually bagged and ribboned! They were only 2" round, but they were hand iced. We only got 4 hours sleep a night though icon_eek.gif ! Tough but not impossible.

Making a plan is always a good idea, so you have a great start! If I have large orders, I always start weeks in advance, by one day mixing all the dough needed, then the next day I bake all the cookies. I wrap them tightly and secure in freezer bags. Then I make sure if I am going to use curl ribbon to tie, that I do that all ahead of time. Then of course the decorating can only be done a couple days ahead.... but if you have done the rest of the work several weeks before, you forget in the end the total amount of time really put into it.
