I made a superb cannolli filling today. I downloaded from cooks.com


it called for 3 cups dry ricotta
1 cup granulated sugar
2 tsp vanilla.
chocolate chips

I added 1 tsp of rum extract and made the chips mini.

Man, I filled a chocolate cake and..just for giggles I tasted some!!

YEOW, was it good!!

I placed the ricotta on a colander that I suspended over a bowl and let sit overnight and placed a small cake pan over it and let the liquid run out. It still needed some draining but, I had to use it as was, I iced my cake and threw it in the freezer for about 5 mins.

now I want to make another chocolate cake.lol

Oo, thanks for the recipe! My husband would eat cannolis for every meal if he could. I'm going to have to use this and not tell him it's there or he'll eat the filling before I have a chance to use it!

it was so easy...forgot that you have to beat for about 8 to 10 mins.

I'm sure that it would thicken up if you refrigerate..let me know..or I will let you know..going to put the rest away!..lol

Just ate a granola bar for my sugar of the day. Don't want to tempt myself too much!

How about adding some Orange rind ? just a little bit..I wonder how it would taste...thank you for sharing icon_smile.gif

Funny you should ask that because years ago I got a cannolli recipe from an old Nona that literally came over on the boat from Italy in the 20's. In addition to the ingredients in the recipe listed here it had candied fruit (as in fruitcake fruit), pecans, and choc chips. Oh man was it good!

a traditional cannoli filling does have candied fruit in it, I don't know why here it's chocolate chips all the way..lol.

I don't think ANYONE would recognize it as canolli filling with the candied fruit...so sad ...too bad!

when I was in Italy for a week it was my mission to eat at least my weight in gillato and cannolis a day. YUMMMM!!!!!
