okay, my customers love the cake balls (thanks Cookieman!) and I got to thinking about different flavors, what do you all think? I was thinking maybe a strawberry one dipped in white chocolate, maybe an orange one. Please help! Any ideas?
Carrot cake balls are my favorite! Use carrot cake crumbs with store-bought cream cheese frosting and dip in white candy melts. You can even pipe a little carrot on top of each one.

I make these all the time. I have used Loarann oils, I have used liquor such as ametteto and kahlua. You could use coffee syrups. The possibilities are endless for flavors.

mrwarnke, cakeballs are balls of cake and icing mixed together and formed into balls and then dipped into melted chocolate (if desired). Most decorators make them out of the cake castoffs from leveling or from wasted cakes (i.e. unsalvageable broken cakes). You just cruble the cake, mix some icing in it, enough to hold the balls together, and form your cake balls. Easy peasy!

all they are is cake mixed with a little buttercream and flavoring. You mix them together and roll them into little balls. I let them sit in the fridge for a bit and then take them out and cover them with chocoalte. I usually use cake scarps that i have cut off from my other cakes.

Here is Cookieman's recipe...
2 cups crumbled cake scraps
2 tablespoons confectioners' sugar
2 tablespoons cocoa powder (if cake scraps are not chocolate based)
1/4 cup chopped almonnds (or any other nut you like, or mini-chocolate chips, or M&Ms, you get the idea!)
2 generous shots of amaretto (or any other liquer you may like, a good non-alcohol substitution is any flavored coffee creamer)
Put all ingredients in a mixer and mix on medium speed until the ingedients form a ball. If the mixture seems too dry, add a bit more of the liquid used to make it moist enough to form into balls.
I use a tablespoon cookie scoop to make the balls uniform in size. Roll the scooped dough in your hands to form a nice smooth ball. Allow cake balls to set on a parchment lined cookie sheet for a couple of hours, then dip them in chocolate(following) or roll them in confectioners' sugar or cocoa.
Melt 1 lb. of candy melts and add approximately a tablespoons of crisco to make it a bit more smooth. Also, put the container (in my case, a pyrex measuring cup) of melted candy melts in a very hot (I use amost boiling) water bath to keep the chocolate fluid. dip balls into the chocolate using a spoon and a dipping fork (in my case, a plastic fork with the two middle tines cut out) Don't worry if the dipped balls have a "foot" at the base after drying. You can break some off after they have hardened and once they are in the little cake liners, no one will notice. Also, you can decorate the tops with just about anything, sprinkles, candy confetti, chopped nuts, etc. before they dry. Or after they've dried, pipe designs with royal icing or melted candy melts of differnet colors!

I have leftover raspberry filling.. do think it would work to use choc. cake and raspberry filling instead of mixing with icing the covering in melted choc??? Also, does this work if the cake was a little too dry, or does it have to be a good cake to do this with?
I think that the filling would work. If you look at Cookieman's recipe, there is no frosting in it. I'm guessing the liquid is the binding agent. AS for the dry cake, I think that will work too. May have to add a little more filling, but should be okay.
Can anyone share the trick to having these come out looking good? I tried to make them and just made a big mess dipping them in the chocolate. I had melted chocolate everywhere. I tried breaking out the middle tines on a plastic fork but it didn't seem to help. There must be some secret to it that I'm missing!
I have rolled these by hand in chocolate and I have used the dipping tools. I have also used a toothpick. I liked the toothpick the best, but it was very slow. I used the dipping tools and I like that one also.
I use the toothpick also! It is slow but it works great. After you pull out the toothpick, just dab a little icing on the hole before it hardens!!
I too can never get mine to look very pretty and I do have the dipping tools!!
I made some today for my daughter to give to 2 teachers and a crossing guard. 1 batch was orange cake with b/c icing that I added a touch of orange flavoring and I cut up some chunks of chocolate then diiped in milk choc and some in white.
The second batch was vanilla cake with mocha flavoring and some ganche icing as well as mini choc chips and crushed pecans and then dipped the same as above, yummy
I still have never made them! My DH eats the cake scraps b4 I can do anything with em!
I made these for the first time a couple of weeks ago. I had leftover yellow cake, so I added the cocoa, powdered sugar, mini chocolate chips and used rum for the binding agent. They were fantastic. I had so many good comments on them, that I will probably make them again. My daughter wants to include them in her Christmas gifts. She always makes homemade cookies or candies for friends.
I also made some using French vanilla coffee creamer as the binding agent. These too were really delicious. This site is a bad influence! I'm finding way too many things to experiment with -- and, of course, when you experiment, you have to try them yourself before you give them to anyone else to try!
The cake balls are much like truffles. They are rich and delicious.
I did these the other day with peanut butter as the binding agent. They were delicious!! I added peanut butter and conf. sugar to my cake scraps until I had a nice ball of dough then made little bites and dipped in melted choc. Needless to say my platter was completely empty at the dessert supper I took them to.
I am salivating, just thinking of all the possibilities. These cake balls are so popular that I am selling them now. Very nice, especially for tea parties or finger dessert trays.
I finally made some! I used hazel nut creamer and a drop of rum. And pecans and all the other ingredients and dipped them in white chocolate they were awesome! ( I did manage to get ONE b4 dh and kids finished em off) LOL...but I didn't get pics of them. Only thing I did wrong is I think next time i will make them smaller.
I made these on Friday for a Barbeque and everyone went NUTS over them! I had left over marble cake so I just added ameretto flavoured coffee creamer, a shot of Baileys, almonds the p.s. and then dipped them in the chocolate candy melts that I added almond flavouring to. Before they dried I sprinkled nuts on top. My husband decided to name the Crema Lovehandles!!! I thought it was histerical and that is probably how they will be advertised!
okay, i am getting hungry now. what great ideas!!! i have some cake left in kitchen...i am going right now to throw it in the mixer and going to add peanutbutter and powder sugar....then will dip them in choc. i'll let you know how they turn out. this is amazing! i was trying to figure out what i could send with kids to church picnic( i cant attend because i will be taking gum paste lessons at micheals)

When I make them, my girlfriends and I call them Chocolate Balls of Goodness!
Plus, we find that with that name, used often, the guys are a "little" less likely to eat as many of them. Tee hee hee. We're evil. But in a good way.
Yes indeed My DH is quite the comedian!!!! But now the name has stuck with the Chocolate Balls being called Lovehandles. I love the Chocolate Balls of Goodness! AND VERY SMART about keeping the guys away!
